Raspberry Fruity Dream Thermomix

I've perfected the single serve of Fruity Dream which is both a positive AND negative! I am loving the guilt free pleasure for dessert most nights (!), but I have so many other things I could try! Here it is...try and resist...


Ingredients

50g raw sugar
200g frozen raspberries
Cold water

Method

Mill sugar 10 seconds, speed 9.

Add berries and chop 10 seconds, speed 8. 

Insert butterfly. Add water (a few splashes, you have to listen out to see if more is needed depending on the berries- if the blade/butterfly isn't turning add more through top hole. Mix 30 seconds, speed 3.

Chocolate Hazelnut Melting Moments in Thermomix

These cookies are melt in your mouth amazing! They are also super quick. I was running out of time to make something for a small dinner party so I jazzed up the 40 second biscuit recipe from the Everyday Cookbook.


Ingredients:

100g almonds
100g raw sugar
150g plain flour
130g butter, softened
2 tsp vanilla

Method:

Preheat oven to 180º Line baking tray.

Put almonds and sugar in TM bowl. Mill 10 seconds, speed 9.

Add remaining ingredients and mix 30-40 seconds, lock TM bowl, knead. 

Roll into small balls, place on baking tray. Flatten slightly with a floured fork. 

Bake 20-30 minutes. Cool on wire rack completely. Spread chocolate hazelnut on each biscuit or to combine two biscuits together. Enjoy! (They don't last long!)

Carrot Cake Quirked (original recipe by Quirky Cooking)


Came across a great carrot cake recipe by Jo, from Quirky Cooking! Made it without the eggs, I used egg replacer, with regular plain flour, olive oil, no nuts and with sultanas...and it still turned out very yummy! A slowly baked cake that is perfectly finished off with a vegan friendly coconut cream topping! Thanks Jo!

Power Breakfast in the Thermomix!

This is a basic recipe from the everyday cookbook, one you must try! The protein rich, moist and naturally sweet mixture is sure to start your day off well :)

Ingredients:

40g fresh or desiccated coconut
40g almonds or nuts of your choice
40g dates or dried fruit of your choice
1 apple, quartered

Method:

Add all ingredients to the TM bowl. Lock TM bowl and pulse 2-3 times, 1 second, TURBO.

Pizza Buns in the Thermomix

Whether for a party, a quick lunch or a snack for your kids these pizza buns are so easy and delicious you have to try them!

Ingredients:

Dough 
280g water
2 tsp dried yeast

15g olive oil
500g plain flour
2 tsp salt
1 tbsp Italian herbs

Vegetarian Topping
1/2 onion, halved
1/2 red capsicum
1/4 red chili (or to your preference)
2 tbsp black olives
3 whole sundried tomatoes in olive oil

Tomato Paste
Shredded Cheese

Method:

Add water and yeast in TM bowl. Mix 1 minute, 37º, speed 1.

Add remaining dough ingredients to TM bowl. Mix 6 seconds, speed 6. Then knead 1.5 minutes. Transfer to Thermomat and shape into a ball. Then fold the mat over dough and place in the Thermoserver to rise for 20-30 minutes in a warm place. 

Add all Vegetarian Topping ingredients, except paste and cheese, into TM bowl. Chop, 5 seconds, speed 5. Prepare any other toppings you wish to use while waiting for the dough. 

Pre-heat oven to 200º and line a baking tray. Once doubled, open the Thermomat and cut dough into 6-12 equal parts. Shape into a ball and slightly flatten using your palm. Place on baking tray. 


Add toppings of your choice and bake for 20-25 minutes.

Roasted Red Pepper Hommus in the Thermomix

This twist to my traditional Hommus recipe was a huge hit at our Father's Day Tea! Pair this delicious dip with fresh veggies for a healthy and light snack!
Ingredients:

1 tin of chickpeas, drained
100g roasted red peppers
15g olive oil
1/2 a lemon, juice only 
1 tbsp tahini
Pinch of salt
Pepper the taste

Method:

Add all ingredients to the TM bowl. Blend 30 seconds, speed 5.

Apple Cinnamon Oatmeal in the Thermomix!

On a cold morning, nothing's better than a warm bowl of oatmeal! I always find comfort in the smell of cinnamon and the pairing with apple is a classic. Here is a foolproof method for anyone who loves oatmeal...

Ingredients:

1 apple, halved

40g rolled oats
1tsp cinnamon
Pinch of salt
300g water

Optional:
Chia Seeds
Sunflower Seeds
Brown Sugar

Method:

Place apple in the TM bowl. Chop 5 seconds, speed 5

Add oats, cinnamon, salt and water. Cook for 5 minutes, 100, REVERSE, speed 1. 

Let stand in TM bowl or Thermoserver up to 5 minutes to thicken slightly. Serve. Add water to your TM bowl and clean for 10 seconds, speed 7.
